The Chestnuts Lunigiana becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) that was released April 16, 2011.
Being a product PDO certification requires that the entire production process should be made in the Tuscany region.
The CTM PDO is synonymous with absolute quality of the product, since it certifies compliance of an ancient chain that starts from the care of chestnut trees, picking and selection of the best local varieties of chestnuts (Brescia, Carpanese, Fosetta, Marzolina, Moretta, Primaticcia , Rigola, Rossella, Rossola of which species of Brescia, and Carpanese Rossola percentage must reach at least 70%), passing through the recovery of the traditional slow method of drying in the ancient metati stone (the so-called gradili) and the milling obtained by millstones in stone. It is thanks to the respect of this method of production together with the dedication to the work and passion for the rediscovery of local traditions and the link with the territory, that the Chestnuts Lunigiana PDO is today a unique product for the ‘ high quality, strong sweet taste from the intense aroma of chestnuts, the consistency from soft ivory cream, which allow a great versatility since the uses in the kitchen.
The Chestnuts Lunigiana PDO is marketed by 15 November each year.
The production area of ​​PDO Chestnuts Lunigiana lies in the province of Massa Carrara. The area of ​​the production area, then, consists of a single body and is entirely within the territory of the Mountain Community of Lunigiana.
