Being a product PDO certification requires that the entire production process must be carried out in the region of Lazio.
Cannellini Beans Atina PDO are grown and produced as a time: the plants are harvested when the pods are mature and, given the climatic conditions of the area, aggregated into bundles and dried with natural ventilation; the bunches are then shelled the old system of manual typing and finally melons and stored in canvas bags.
The main features of Cannellini Beans Atina PDO are, the scent and flavor delicate and thin skin and soft.
These crops are practiced in land adjacent to the river and the creek Mollarino Melfa. The soil, the water, the microclimate, the seeds pedoclimactic perfectly adapted to the environment, and the type of cultivation, without the use of pesticides and herbicides of chemical synthesis, almost always harmful natural humus soil and to the health of consumer, have made the varieties used more rustic and therefore more resistant and sufficiently refractory to degenerative diseases of the bean, giving the product a unique flavor.
