Cannellini Beans Atina become part of the official list of typical Italian products with the certification PDO (protected designation of origin) that was released August 5, 2010.
Being a product PDO certification requires that the entire production process must be carried out in the region of Lazio.
Cannellini Beans Atina PDO are grown and produced as a time: the plants are harvested when the pods are mature and, given the climatic conditions of the area, aggregated into bundles and dried with natural ventilation; the bunches are then shelled the old system of manual typing and finally melons and stored in canvas bags.
