The Artichoke Thorny of Sardinia joined the official list of typical Italian products with the certification PDO (protected designation of origin) that was issued on 4 February 2011.
Being a product PDO certification requires that the entire production process must be carried out in the region of Sardinia.
A product whose peculiarity has its foundation in the strong bond with the island territory, particularly suited for both traditional cultivation techniques for the favorable climatic conditions and morphological. The joint existence of these factors allows to obtain a product which is distinguished, not only for the aesthetic appearance, but also for the organoleptic characteristics such as limited astringency, pleasant flavor, the result of balanced synthesis of bitter and sweet, and tenderness of the pulp that encourage consumption uncooked.
This culture has found its natural habitat and the ideal climatic conditions for its development in coastal areas, which enjoy special microclimates, in the valley and in the central plains of the island, located on the sides of the most important waterways. In addition to this inner vocation of the territory, the human resource with its tradition, experience and ability allows, through the manual operations of collection, sorting and grading, the selection of the best artichoke.
From a historical point of view the production, the culture of the artichoke and, in particular, its relationship with the environment, are the roots since the time of the Phoenicians and, along the centuries, to the present day where it is one of the economies mainstay of agriculture and national island. The historical origin of the product has led the consumer to identify in the course of time, the Artichoke Thorny Sardinian PDO with the image of Sardinia itself so that in common parlance is called “artichoke Spinoso di Sardegna” in the menus of several restaurants, labels in the business and commercial documents; here comes the need to formalize the established use of that name, in order to make the indissoluble link between the characteristics of the product and the Sardinian territory, protecting consumers and producers from any incorrect and undue use.
