The White Asparagus Bassano becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) that was released September 13, 2007.
Being a product PDO certification requires that the entire production process should be made in the Veneto region.
The White Asparagus Bassano PDO has the following features: white, length between 18 and 22 cm diameter and central minimum of 11 mm, shoots well formed, straight, entire with apex tight, tender and non-wood, to look and smell Fresh. It is also permitted by the specification the presence of some cross-cutting cleavages of the shoots, element of quality and product identification Bassano, due to low fibrosity which is the main qualitative characteristic. The White Asparagus Bassano PDO has a bitter-sweet taste characteristic that sets it apart from all other species of asparagus. It is usually sold in bunches of 1.0 kg or 1.5 kg, all uniforms and tied with a Epicormic shoot willow called “stroppa”. In “stroppa” has entered the brand flag depicting a bunch of white asparagus and the Palladian Bridge, both stylized, with the numerical codes that lead back to the manufacturer, a day of harvesting and packaging of the product.
