The Quartirolo becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) which was issued on 21 June 1996.
Being a product PDO certification requires that the entire production process must be carried out in the region of Lombardy.
II Quartirolo PDO is white with a paste consistency “pinstripe”, soft and with a very good taste, has a history that is intertwined with the seasonal cycle and habits of a very specific agricultural part of Lombardy, located between the plains of Po and the pre-alpine valleys between Bergamo and Lecco, where ruleth, among all others, the famous profile of Resegone.
Here, already a few thousand years ago the inhabitants cared pastures, cultivated the fields and herds of cattle bred for milk and turn it into cheese. Its origin dates back to at least the tenth century AD and has to do with the ancient custom of herdsmen Lombard, locally called bergamini, to stay the cattle in the mountains during the summer months and bring further downstream just before autumn , where the climate is more forgiving and meadows still manage to grow, managing to give forage grass even at the end of the season.
The Quartirolo PDO is the leaner cheese Protected Designation of Origin. It ‘a natural food: no additive must be employed during its production and during its possible seasoning.
The weight of the shapes can vary from 1.5 kg to 3.5 kg.
