The Piave becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) that was released May 22, 2010.
Being a product PDO certification requires that the entire production process should be made in the Veneto region.
The province of Belluno, the area of origin of the Piave cheese PDO, is the northernmost part of the Veneto, Trentino Alto Adige wedged between the Northwest and the Friuli Venezia Giulia to the east.
The Belluno is, even for the people, the typical alpine environment, proud of their traditions handed down over time through experience and oral narration.
The Piave PDO is a cheese that recalls the traditions of mountain Belluno: born from the experience of “dairymen” local it handed down from one generation to the richness of flavor and culture of an area rich in tradition and history.
It is a cooked cheese, hard, proposed in five ages:
Piave Fresch PDO (20/60 days)
Piave Mezzano PDO (61/180 days)
Piave Old PDO (> 180 days)
Piave Old Selection Gold PDO (> 12 months)
Piave Old Reserve PDO (over 18 months)
The milk used for the production of PDO Piave comes exclusively from the province of Belluno and is produced, at least 80%, from cattle breeds typical of the production area: the Italian Brown, Italian Red Pied and Holstein Italian.
