The Piacentinu Ennese becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) that was released on 15 February 2011.
Being a product PDO certification requires that the entire production process must be carried out in the region of Sicily.
The Piacentinu Ennese PDO is a compact pressed cheese made with raw whole milk with natural acidity from fermentation, produced by sheep breeds native Sicilian Comisana, Pinzirita, Valle del Belice breeds and their crosses.
The distinctive feature of Piacentinu Ennese PDO consists of adding saffron to the milk during the cheesemaking process. Saffron is a culture that manifests itself especially well suited to being grown in Sicily. The typical conditions in the Enna area favor the production of “quality saffron”.
Based on these parameters, it was possible to place Enna saffron in the I and II category of quality and its specific aromatic qualities make the final product’s bouquet more intense and characteristic.
