Pecorino di Filiano becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) that was released on 15 December 2007.
Being a product PDO certification requires that the entire production process must be carried out in the region of Basilicata.
The PDO Pecorino di Filiano is a hard cheese from sheep farms located in thirty municipalities in the province of Potenza, in the North-West of Basilicata.
The PDO Pecorino di Filiano is a hard cheese and semi-produced with whole sheep’s milk and raw. Has a cylindrical shape with flat faces with a diameter of 15 to 30 cm and height straight or slightly convex with a height of 8 to 18 cm, weight ranges from 2.5 kg to 5 kg and the minimum seasoning scheduled for release to the market is of 180 days.
The color of the crust, characterized by the signs of the typical baskets in which is stored the cheese varies from golden yellow to dark brown, depending on age, while the pasta, grainy and crumbly, it varies in color from white to straw.
This cheese has a compact texture and has small holes distributed irregularly.
The sweet and delicate flavor of the cheese cooler, once they reach the minimum phase of maturation, becomes slightly spicy, a feature that tends to worsen with advancing aging.
Pecorino di Filiano PDO is an excellent table cheese, but for its flavor and its organoleptic characteristics enters natural combination with many dishes with strong flavors traditional cuisine from Basilicata, especially as grated cheese on homemade pasta topped with meat sauce meat.
