Nostrano Valtrompia becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) that was released July 13, 2012.
Being a product PDO certification requires that the entire production process must be carried out in the region of Lombardy.
The area of production and maturation of cheese Nostrano Valtrompia PDO belongs to the municipalities of the Province of Brescia falling in the Valley Trompia.
Nostrano Valtrompia PDO cheese is a semi-fat extra hard, produced throughout the year, from raw milk and with the addition of saffron.
The characteristics of the product at the time of consumption, are as follows:
– Cylindrical shape, with a height almost straight, the diameter is between 30 and 45 cm and the height of the heel ranges from 8 to 12 cm; the weight of the form can vary from 8 to 18 kg;
– The rind is hard and is colored variables from yellow brown to reddish;
– The cheese is hard, but not too grainy, and can have holes of size medium-fine evenly distributed; has taste and aroma full and intense, without perception of acid notes at minimum ripeness and when very seasoned with notes of pungent just mentioned;
– The color of the paste is pale yellow with a tendency to yellow green;
– The minimum duration of the aging is 12 months.
