Ricotta di Bufala Campana becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) that was released July 20, 2010.
Being a product PDO certification requires that the entire production process must be carried out in the regions: Campania, Lazio, Puglia and Molise.

Ricotta di Bufala Campana PDO is a fresh dairy product, therefore without maturation, obtained by heat coagulation of whey proteins of buffalo milk, raw materials resulting from the production of Mozzarella di Bufala Campana PDO, which gives it particular characteristics Structural of creaminess and softness, a white porcelain, and strong sensory properties describable as delicate fragrance of milk and sweetness.
In respect of the Production Regulations dairies must use only sweet whey from the manufacture of Mozzarella di Bufala Campana PDO, turning it into cheese within 24 hours from its extraction. It may be added buffalo milk or cream whey buffalo during processing provided from the area of ​​production, the same to that of the Mozzarella di Bufala Campana PDO.
The packaging in the production area is required in order to ensure the traceability and control and to not alter the quality of the product.
Ricotta di Bufala Campana PDO is packaged in paper, plastic containers for food or other heat-sealed windings for food. On the package are, in addition to the logo of the designation, the Community graphic symbol and the information required by law the words “fresh” or “fresh homogenized”. For the latter, in order to obtain a product with a shelf life greater than that defined “fresh” is a further heat treatment. The shape of the dairy product is typical frusto-pyramidal or frusto-conical, with a weight up to 2 kg. In the event that the Ricotta di Bufala Campana PDO is sold to be employed as an ingredient in processed food (stuffed pasta, sweets etc.) shall be allowed up to 40 kg packs.
